Ingredients (with modifications)
- 1 tbsp. olive oil
- 1 bag of macaroni (any kind - use your favorite or try another kind)
- 3/4 cup red onion, chopped
- 1 red bell pepper
- 1 4-oz. can green chilies
- 1 jalapeno pepper (seeded and diced) - keep seeds if you're brave
- 2-3 cloves garlic
- 1 c. frozen corn
- 1 1/2 c. pepper jack cheese
- 1 c. heavy cream
- Heat olive oil in a large skillet over medium heat. Add onions, red pepper, jalapeno, and garlic. Sautee until tender. Add green corn and heat for 2 minutes. Add chilies.
- While doing above, boil macaroni in a large pot of boiling water until al dente. Drain.
- Add macaroni to vegetable mixture and remove from heat.
- Add 1 c. of heavy cream and cheese. Stir until combined. Add salt and pepper to taste. Stir and allow to melt. Serve warm.
